Bread & tomato soup (Pappa al pomodoro)

Delicious Tuscan soup with roasted cherry tomatoes, family-friendly and versatile with tinned tomatoes.
Ingredients:
  • 3 cloves of garlic
  • 1 big bunch of fresh basil
  • 500 g ripe cherry tomatoes
  • quality extra virgin olive oil
  • 2 x 400 g tins of quality plum tomatoes
  • 500 g stale quality bread
Instructions:
  • Preheat the oven to 180ºC/350ºF/gas 4. Mince the garlic and finely chop the basil leaves and stalks. Prick the cherry tomatoes, place in a roasting tray with garlic and basil, drizzle with olive oil, season with salt and pepper, toss, then roast for 20 minutes. In a pan, heat oil, cook remaining garlic and basil stalks. Add tinned tomatoes, water, bring to a simmer for 15 minutes. Tear in bread, season, add most of the basil leaves, simmer for 10 minutes. Add roasted tomatoes with juices to the pan. Stir until thick and silky, adjust with water if needed. Remove from heat, add olive oil, divide into bowls and serve with remaining basil.
