Turn stale bread into a delicious Italian pantry meal in minutes!
Ingredients:
  • 4 cloves of garlic
  • olive oil
  • 1 bunch of fresh basil (30g)
  • 2 x 400 g tins of plum tomatoes
  • 270 g stale ciabatta
  • 40 g Parmesan cheese
  • extra virgin olive oil
Instructions:
  • Prepare garlic by peeling and finely slicing. Heat 1 tablespoon of olive oil in a large pan over medium heat, stirring regularly. Place baby basil leaves in cold water for later use, then add the rest of the basil leaves to the pan. Add tomatoes and 2 tins’ worth of water before the garlic colors. Season with sea salt and black pepper, bring to a gentle boil, and mash the tomatoes. Tear in stale bread, stir, and simmer for 5 minutes on low heat until thick. Grate and stir in Parmesan, taste, and adjust seasoning. Serve, garnishing with reserved baby basil leaves and drizzling each bowl with 1 tablespoon of extra virgin olive oil. Enjoy this delicious meal.
