Enhance your meal with a vibrant tomato and butter bean salad.
Ingredients:
  • 150g green beans, trimmed, cut into 4cm lengths
  • 2 x 400g cans butter beans, drained, rinsed
  • 400g packet tomato medley, halved
  • 1/2 small red onion, thinly sliced
  • 80g baby rocket
  • 250.00 ml fresh basil leaves, torn
  • 11.80 gm dijon mustard
  • 62.50 ml red wine vinegar
  • 36.40 gm extra-virgin olive oil
  • Pinch sugar
Instructions:
  • In a microwave-safe bowl, combine green beans and 1 tablespoon of cold water. Cover and microwave on high for 1 to 2 minutes until tender. Drain and refresh under cold water. Drain again.
  • Combine green beans, butter beans, tomato, onion, arugula, and fresh basil in a bowl.
  • Prepare the dressing by combining mustard, vinegar, oil, and sugar in a screw-top jar. Season with salt and pepper, then secure the lid and shake vigorously. Drizzle the salad with the dressing, toss well, and serve.
