Tomato & onion salad with tamarind

Vibrant salad with spicy chilli, fresh coriander, and tangy tamarind for a burst of flavor.
Ingredients:
  • 2 tsp tamarind puree
  • 16.00 gm brown sugar
  • 20.00 gm hot water
  • 250g cherry tomatoes, quartered
  • 1/2 Lebanese cucumber, finely chopped
  • 1/2 red onion, finely chopped
  • 1/2 long fresh green chilli, deseeded, thinly sliced
  • 62.50 ml fresh coriander leaves, coarsely chopped
Instructions:
  • Mix together the tamarind puree, sugar, and water in a small bowl, then taste and adjust seasoning with salt.
  • In a medium bowl, mix together the tomato, cucumber, onion, and chili. Add the tamarind mixture and toss well to combine.
  • Stir in the coriander gently until incorporated. Serve and enjoy!
