Elevate your rice with juicy tomato and sweet pineapple for a vibrant Asian-inspired side dish.
Ingredients:
  • 36.80 gm vegetable oil
  • 1 red onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 x 240g pkt baby roma tomatoes, halved lengthways
  • 1/2 small pineapple, peeled, cored, coarsely chopped
  • 600g (3 cups) jasmine rice
  • 750ml (3 cups) chicken style liquid stock
  • 60ml (1/4 cup) tomato sauce
Instructions:
  • In a large saucepan over medium heat, sauté the onion and garlic in the fragrant, hot oil until they are soft and translucent, which should take about 3 minutes. Stir occasionally to ensure even cooking.
  • Combine the tomato and pineapple in the pan. Stir constantly and cook for 2 minutes, or until they slightly soften.
  • Combine the rice, stock, and tomato sauce in a pot and bring to a boil. Reduce heat, cover, and simmer for 12 minutes until the stock is absorbed. Let it sit covered for an additional 10 minutes until the rice is tender. Serve and enjoy!
