Creamy chicken and rice topped with a flavorful medley of cheese, tomato, onion, pineapple, and coconut. A unique and delicious family recipe passed down for 20 years.
Ingredients:
  • 2 cups long grain white rice
  • 4 cups water
  • 1.5 pounds skinless, boneless chicken breast halves
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 0.75 cup shredded Cheddar cheese
  • 0.75 cup chopped tomatoes
  • 0.75 cup chopped green onions
  • 1 cup pineapple chunks, drained
  • 0.5 cup unsweetened flaked coconut
  • 1 cup chow mein noodles
Instructions:
  • In a saucepan, simmer rice and water together until tender, covered, for about 20 minutes. Then set aside.
  • Place chicken breasts in a saucepan filled with enough water to cover them. Boil until tender for 20 to 30 minutes. Remove chicken, keeping the flavorful liquid for later, and shred the meat.
  • Add the shredded chicken back to the saucepan and mix in the soup. Gradually stir in 1 cup of the reserved water until the sauce reaches your preferred thickness. Let it simmer for 15 minutes.
  • To assemble, mound a generous cup of cooked rice on a plate, ladle the flavorful chicken mixture over it, and sprinkle with a colorful array of Cheddar cheese, tomatoes, green onions, pineapple chunks, coconut, and crunchy chow mein noodles until you create a delightful peak. Grab a fork and savor every bite!
