Happy Apple Zucchini Muffins

Moist yogurt muffins with apple, zucchini, and carrot - guilt-free deliciousness!
Ingredients:
  • 1.5 cups wheat flour
  • 0.5 cup oat bran
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon ground cinnamon
  • 0.75 cup nonfat plain yogurt
  • 1.25 cups peeled and chopped apples
  • 1 cup shredded zucchini
  • 0.5 cup grated carrot
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a 12-cup muffin tin with greased cups or paper liners.
  • In a large bowl, combine flour, oat bran, baking soda, baking powder, and cinnamon. Set aside. Beat eggs for 1 minute, then mix in yogurt, brown sugar, and vanilla extract. Gently mix flour mixture into egg mixture until just combined. Fold in apples, zucchini, and carrot until evenly distributed. Spoon batter into muffin cups, filling each about 2/3 full.
  • - Bake in your preheated oven for 15 minutes. After that, rotate the muffin cups 180 degrees. Keep baking until a toothpick inserted into the center comes out clean, which should take about 10 more minutes. Allow the muffins to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
