Easy weeknight salmon paired with sauteed spinach and a glass of pinot noir.
Ingredients:
  • 2 (6 ounce) boneless salmon fillets
  • 1 tablespoon dried basil
  • 1 tomato, thinly sliced
  • 2 tablespoons grated Parmesan cheese
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C), then prepare a baking sheet lined with aluminum foil and nonstick cooking spray. Arrange the salmon fillets on the foil, season with basil, layer with tomato slices, drizzle with olive oil, and sprinkle with Parmesan cheese.
  • Roast in the oven until the salmon is cooked through and the Parmesan cheese is golden, approximately 20 minutes.
