Tangy raspberries elevate this salad with creamy mozzarella and fragrant basil.
Ingredients:
  • raspberry vinegar
  • 8 ripe heirloom tomatoes
  • extra virgin olive oil
  • 85 g raspberries
  • 2 x 125 g burrata or good-quality mozzarella cheese
  • a few sprigs of fresh basil
Instructions:
  • Arrange sliced tomatoes on a plate and season with sea salt, black pepper, and oil. Drizzle raspberries with raspberry vinegar and crush with a fork. Tear burrata and scatter over tomatoes, then drizzle with raspberry dressing. Top with basil leaves before serving.
