Tomato chutney with aged cheddar

Elevate your autumn picnic with aged cheddar and flavorful homemade tomato chutney.
Ingredients:
  • 2kg tomatoes, chopped
  • 2 green apples, peeled, chopped
  • 2 large onions, chopped
  • 150g sultanas
  • 50.00 ml malt vinegar
  • 500g brown sugar
  • 2 garlic cloves, finely chopped
  • 20.00 ml mustard powder
  • 10.00 gm mild curry powder
  • 2 tsp whole black peppercorns
  • 10.00 gm cornflour
  • Aged cheddar, to serve
  • Muscatels, to serve
  • Sourdough bread, to serve
Instructions:
  • Add tomatoes, apples, onions, sultanas, vinegar, sugar, garlic, mustard, curry powders, peppercorns, and 2 tablespoons of salt to a large saucepan. Stir over low heat until the sugar dissolves. Increase the heat to medium-high and bring the mixture to a boil. Reduce the heat to medium-low and cook for 45-50 minutes until the ingredients break down and the mixture thickens. Check the consistency by pressing the back of a metal spoon into the mixture - if a pool of liquid forms, continue cooking for a bit longer.
  • Create a silky paste by blending cornflour with 1/4 cup (60ml) of cold water. Incorporate this into the chutney, simmer for an additional 10 minutes until it thickens. Allow it to cool before transferring to sterilized jars. Enjoy with cheddar, muscatels, and sourdough.
