Tomato salad with garlic bread recipe

Try this refreshing tomato salad with garlic bread for a perfect light lunch pairing with fish or beef slices.
Ingredients:
  • 40.00 ml white wine vinegar
  • 36.40 gm extra virgin olive oil
  • Pinch of raw sugar
  • 600g mixed tomatoes, halved
  • 1/2 bread
  • Sourdough Baguette*, thinly sliced diagonally
  • 200g fresh mozzarella, torn
  • 2 roma tomatoes, cut into wedges
  • 100g unsalted butter, softened
  • 2 garlic cloves, crushed
  • 62.50 ml finely chopped flat-leaf parsley
  • 62.50 ml basil leaves
  • Flat-leaf parsley sprigs, to serve
Instructions:
  • Preheat the oven to 180°C and line a large baking tray with parchment paper. Mix vinegar, oil, and sugar in a bowl, and season to taste.
  • Combine the tomatoes with the vinegar mixture in the bowl, gently tossing until well mixed. Let it sit for 20 minutes or until the tomatoes release their juices.
  • In a small bowl, combine the butter, garlic, and parsley using a fork until well mixed. Season with salt and pepper. Spread the butter mixture onto one side of each baguette slice. Place the slices in a single layer on the tray. Bake for 6 minutes until the baguette slices are golden and crisp.
  • Strain the tomato mixture, keeping 1/4 cup (60ml) of the vinegar in the bowl.
  • Ladle tomato mixture onto plates. Top with mozzarella slices. Season with salt and pepper. Garnish with fresh basil and parsley. Finish with a drizzle of reserved vinegar mixture. Serve with garlic bread.
