Delicious Portuguese orange cake: moist and zesty.
Ingredients:
  • Melted butter, to grease
  • 5 eggs
  • 125ml (1/2 cup) fresh orange juice
  • 20.00 ml finely grated orange rind
  • 30g unsalted butter, melted
  • 40g (1/4 cup) plain flour, sifted
  • Orange zest, to decorate
Instructions:
  • Preheat your oven to 180°C. Lightly grease a 23.5 x 29cm swiss roll pan with melted butter and line it with baking paper. Using an electric beater, whip eggs and 155g (3/4 cup) of sugar in a bowl until the mixture is thick and pale, and a ribbon trail forms when the beaters are lifted. Mix in orange juice, orange rind, butter, and flour until well combined. Pour the batter into the prepared pan. Bake for 15-18 minutes or until golden brown.
  • Sprinkle the remaining sugar evenly over a clean tea towel.
  • Invert the cake onto a tea towel, peel off the baking paper, then carefully roll it up using the tea towel as a guide. Let it cool seam-side down for 15 minutes, then refrigerate for 2 hours to set. Slice, garnish with orange zest, and serve with cream.
