Spicy breaded chicken sandwiched in a Mexican bun with avocado, lettuce, tomato, pickles, and spicy spread.
Ingredients:
  • 0.5 pound skinless, boneless chicken breast
  • 1.5 tablespoons cornstarch
  • 1 egg
  • 0.33333334326744 cup bread crumbs
  • 2 tablespoons chopped fresh cilantro
  • 1 teaspoon ground chipotle pepper
  • 1 teaspoon dried Mexican oregano
  • 1 teaspoon ground cumin
  • 0.25 teaspoon coarsely ground black pepper
  • 2 bolillo rolls, sliced in half lengthwise
  • 3 tablespoons mayonnaise
  • 1 tablespoon hot sauce (such as Valentina®)
  • 2 tablespoons sunflower seed oil
  • 0.5 avocado, sliced
  • 3 slices tomato
  • 2 lettuce leaves
  • 1 tablespoon pickled carrots
  • 1 tablespoon pickled jalapeno peppers
Instructions:
  • Preheat the oven to 250°F (120°C) for a perfectly calibrated cooking environment.
  • Place the chicken breast in a resealable zip-top plastic bag and gently pound it to a 1/4-inch thickness. Add cornstarch, seal the bag, and shake to coat the chicken evenly.
  • In a shallow bowl, beat the egg. Coat the chicken breast with the egg and let it sit in the bowl. In a bag, combine bread crumbs, cilantro, chipotle, oregano, cumin, and pepper. Transfer the chicken from the bowl to the bag, letting excess egg drip off. Shake the bag to coat the chicken with the seasoned bread crumbs. Press the mixture onto the chicken breast.
  • Bake the bolillo buns in the preheated oven for about 12 minutes until they are warm and toasted.
  • Combine mayonnaise and hot sauce in a small mixing bowl.
  • In a skillet over medium heat, sizzle the chicken until beautifully browned on each side for about 6 minutes. Ensure it's perfectly cooked by reaching 165 degrees F (74 degrees C) in the center with an instant-read thermometer. Finish by slicing the chicken in half lengthwise.
  • Create delicious sandwiches by generously coating both sides of the rolls with zesty spicy mayo. Layer equal portions of avocado, tomato, lettuce, carrots, and jalapeños on two halves. Place chicken and the top halves of the rolls to complete the sandwiches. Serve with extra spicy mayo on the side for a flavor-packed dipping experience.
