Try this mouthwatering Spanish tortilla recipe for a flavorful potato omelette perfect for any occasion.
Ingredients:
  • 1 tablespoon olive oil, or more if needed
  • 2 large potatoes, peeled and thinly sliced
  • salt and pepper to taste
  • 0.25 teaspoon smoked paprika, or to taste
  • 1 sweet Spanish onion, thinly sliced
  • 1 teaspoon olive oil
  • 1 bunch fresh parsley, coarsely chopped
  • 1 tablespoon olive oil
Instructions:
  • Preheat the oven to 350°F (175°C) for a perfectly cooked dish.
  • In an oven-proof skillet, heat up 1 tablespoon of olive oil over medium heat until it shimmers. Add the potatoes to the hot oil, season with salt, pepper, and sprinkle with smoked paprika. Pan-fry the potatoes, stirring occasionally, until they begin to soften, around 8 minutes.
  • Sauté the onion until lightly browned and translucent with the potatoes, stirring occasionally, for about 10 minutes. Remove the skillet from heat and let it cool for 5 minutes.
  • In a large bowl, whisk together eggs and 1 teaspoon of flavorful olive oil. Gently fold in fragrant parsley, followed by the potato-onion mixture until just mixed.
  • In the same skillet, heat the olive oil over medium heat until it shimmers. Carefully pour the egg-potato mixture into the hot oil. Reduce the heat to medium-low and gently shake the skillet to loosen the omelette. Transfer the skillet to the preheated oven.
  • Place the omelette in the preheated oven until it puffs up and turns golden brown, approximately 5 minutes. To check for doneness, insert a toothpick into the center - it should come out clean. Then, slice into pie-shaped pieces and serve.
