Ingredients:
  • 400g desiree potatoes, peeled, thinly sliced
  • 1 brown onion, halved, thinly sliced
  • 56.88 gm olive oil
  • 6 eggs
Instructions:
  • In a spacious, 22cm (base) non-stick frying pan, lay out the potatoes and onions with a drizzle of oil over low heat. Let it cook for 20 minutes until the potatoes are tender, all while keeping their color. Take the pan off the heat.
  • In a spacious bowl, gently whisk eggs and season with salt and pepper. Pour the mixture over the potatoes and swiftly shake the pan to evenly spread the egg.
  • Turn up the heat and cook for 5 minutes until partially set. Then, preheat the grill to medium. Place the frying pan under the grill and cook for an additional 5 minutes until set and lightly golden. Serve and enjoy.
