Ingredients:
  • 6 white tortillas
  • 20.00 ml white wine vinegar
  • 4 eggs (optional)
  • 1 butter lettuce, leaves torn
  • 1 bunch fresh coriander, sprig picked
  • 1/2 avocado, thinly sliced lengthways
  • 2 tomatoes, chopped
  • 1 red onion, chopped
  • 40g olive
  • 42.00 gm fresh lime juice
  • Salt & freshly ground pepper
Instructions:
  • Heat up the grill. Slice each tortilla into 8 pieces and spread them out on 2 baking trays. Grill for about 3 minutes until they are nice and crispy.
  • Fill a frying pan with water and bring to a gentle boil. Add the vinegar, then carefully crack the eggs into the water. Turn off the heat, cover, and let the eggs cook for 5 minutes. Use a slotted spoon to transfer the eggs to a plate.
  • Mix crisp lettuce, fresh coriander sprigs, creamy avocado, and crunchy tortilla crisps. In another bowl, toss together ripe tomatoes, onions, flavorful olives, and zesty lime. Season everything with a sprinkle of salt and a crack of pepper. Plate the salad, top it with a perfectly poached egg, and drizzle it with the vibrant salsa. Enjoy promptly.
