Kid-friendly taco salad with flavorful seasoned beef, baked tortilla chips, low-fat Cheddar cheese, and salsa - perfect for a healthy school lunch!
Ingredients:
  • 2 pounds lean ground beef
  • 1 medium onion, finely chopped
  • 1.5 cups low-sodium tomato juice
  • 2 tablespoons hot pepper sauce (such as Frank's RedHot®)
  • 2 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 0.75 teaspoon salt
  • 0.5 teaspoon cayenne pepper
  • 1 (14.5 ounce) package baked tortilla chips, or to taste
  • 1 cup shredded reduced-fat Cheddar cheese, or to taste
  • 0.33333334326744 head iceberg lettuce, shredded, or to taste
  • 1 cup salsa, or to taste
Instructions:
  • In a large skillet over medium heat, sauté beef and onion until beef is no longer pink, about 5 to 7 minutes. Drain any excess grease and return beef to the skillet. Stir in tomato juice, hot sauce, chili powder, cumin, garlic powder, oregano, salt, and cayenne pepper. Simmer gently for about 15 minutes.
  • In individual bowls, crush tortilla chips and layer with the ground beef mixture. Top generously with Cheddar cheese, fresh lettuce, and a flavorful salsa.
