Impossibly Easy Turkey Taco Pie

Healthier cheesy taco pie made with ground turkey, ready in 15 minutes.
Ingredients:
  • 1 lb ground turkey breast
  • 1 medium onion, chopped (1/2 cup)
  • 1 packet (1 oz) Old El Paso™ Original Taco Seasoning Mix
  • 1 can (4 oz) Old El Paso™ Chopped Green Chiles, undrained
  • 1/2 cup Original Bisquick™ mix
  • 1 cup milk
  • 2 eggs
  • 1/2 cup shredded Colby-Monterey Jack cheese blend (2 oz)
  • 1 medium tomato, chopped (3/4 cup)
  • 1 1/2 cups shredded lettuce
  • 2 medium green onions, sliced (2 tablespoons), if desired
Instructions:
  • Preheat oven to 400°F and generously coat a 9-inch glass pie plate with cooking spray.
  • Cook the turkey and onion in a 10-inch skillet on medium-high heat for 5 to 7 minutes until the turkey is no longer pink. Add taco seasoning mix, then transfer the mixture to a pie plate and top with chilies evenly.
  • Combine Bisquick mix, milk, and eggs in a medium bowl using a wire whisk or fork until smooth, then pour the mixture into a pie plate.
  • Bake for 25 minutes, then add cheese and tomato on top. Continue baking for an additional 2 to 3 minutes, or until the cheese is melted. Allow to rest for 5 minutes before serving, then garnish with lettuce and green onions.
