Seasonal classic: Husband-approved hearty chili without beans, a crowd favorite.
Ingredients:
  • 1 large onion, chopped
  • 6 cloves garlic, chopped
  • 0.33333334326744 cup chili powder
  • 1.5 teaspoons ground cumin
  • 1.5 teaspoons dried basil
  • 1 (28 ounce) can diced tomatoes with juice
  • 1 (4 ounce) can diced green chile peppers, drained
  • 1 (15 ounce) can tomato sauce
  • 1 (12 fluid ounce) can or bottle beer
  • 1 tablespoon white vinegar
  • 3 tablespoons brown sugar
  • 1 teaspoon hot pepper sauce (e.g. Tabasco™)
  • 0.5 teaspoon ground black pepper
Instructions:
  • In a large saucepan over medium heat, sauté ground beef, onion, and garlic until beef is no longer pink and onion is tender. Drain fat and return to heat. Sprinkle chili powder, cumin, and basil over the beef, stirring to coat and toast the spices.
  • Add tomatoes, green chilies, tomato sauce, beer, and vinegar to the saucepan. Bring to a boil, stirring to release any bits stuck to the bottom. Incorporate brown sugar, hot pepper sauce, salt, and pepper. Lower the heat, cover, and simmer for 2.5 hours; uncover for the final 30 minutes.
