Traditional apple pie

Irresistible apple pie is a new family classic.
Ingredients:
  • 300g (2 cups) plain flour
  • 45g (2 1/2 tbsp) caster sugar
  • 4.00 gm baking powder
  • Pinch salt
  • 180g cooking margarine or butter, chilled, cubed
  • 1 large egg
  • Iced water
  • 1.25kg (about 5 large) Granny Smith apples
  • 20mls (1 tbsp) lemon juice
  • 55g (1/4 cup) sugar
  • 40.00 ml apricot jam
  • 20g (1 tbsp) butter, cubed
  • 1 egg white, lightly beaten, to glaze
  • 18.00 gm sugar
  • Thick or thin cream, or vanilla or cinnamon ice-cream, to serve
Instructions:
  • Preheat your oven to a toasty 190°C.
  • Grease a 23cm glass or ceramic pie dish with butter. To prepare the pastry, mix flour, caster sugar, baking powder, and salt in a bowl. Using your fingertips, blend in margarine or butter until mixture looks like breadcrumbs. Create a well in the center, then add an egg and just enough iced water (10mls or 2 teaspoons) to form a soft dough. Gently bring it together with your fingertips and shape it into a disc. Wrap the dough completely in plastic wrap and chill in the refrigerator for 30 minutes.
  • Peel, core, and cut apples into wedges. Toss them with lemon juice to prevent browning. Before rolling out pastry, mix apples with sugar and cinnamon.
  • Roll out two-thirds of the pastry into a 28cm round and place it in a buttered pie dish. Trim edges, spread with apricot jam, and layer apple slices inside. Add dots of butter, brush edges with beaten egg white. Roll out remaining pastry, cover the pie, seal edges, trim, and decorate as you like.
  • Create decorative slits on the pie crust, brush with egg white, and sprinkle with a tablespoon of sugar. Bake in a preheated oven for 20 minutes. Lower the temperature to 180°C and bake for an additional 30 to 40 minutes until golden. Enjoy warm with cream or ice-cream.
