Traditional British Fish Pie

Cod and vegetable pie topped with cheesy mashed potatoes, baked until golden.
Ingredients:
  • 2 pounds potatoes, peeled and diced
  • 2 cups milk
  • 0.5 teaspoon ground nutmeg
  • 1 (1 pound) fillet cod
  • 0.5 cup butter, divided
  • 1 medium leek, white part only, chopped
  • 0.25 cup all-purpose flour
  • 4 ounces grated sharp Cheddar cheese, divided
  • 1 cup peas
  • salt and ground black pepper to taste
  • 2 hard-boiled eggs, quartered
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • In a large pot, submerge the potatoes in salted water and bring to a boil. Lower the heat to medium-low and simmer until tender, approximately 20 minutes. Drain and allow to cool.
  • In a large pan over medium-low heat, gently simmer milk with bay leaf and nutmeg. Add cod and poach until flaky, about 5 minutes. Use a slotted spoon to transfer cod to a plate, keeping the poaching liquid. Flake the fish into bite-size pieces using a fork.
  • Combine mashed potatoes with 3 tablespoons of butter and 2 tablespoons of poaching liquid until a thick consistency is reached.
  • In a skillet over medium heat, melt 1 tablespoon of butter. Add leek and cook until soft and translucent, about 5 minutes. Remove from heat and set aside.
  • In a large, deep skillet over medium heat, melt the remaining 1/4 cup of butter until it stops bubbling. Stir in the flour to make a roux and cook for 1 minute. Gradually add the remaining poaching liquid while stirring constantly to create the base of the sauce. Mix in half of the sharp Cheddar cheese until melted. Gently add the flaked cod, leek, and peas, then season with salt and pepper.
  • Spread the fish mixture in an oven-proof dish, delicately press boiled eggs on top, then layer with mashed potatoes and sprinkle with the remaining Cheddar cheese.
  • Place the dish in the preheated oven and bake until the top is beautifully golden brown, approximately 30 minutes. Serve right away for the best experience.
