Lunar New Year sweet steamed "prosperity cake" from China.
Ingredients:
  • 0.5 cup warm water
  • 2 teaspoons active dry yeast
  • 1.5 cups cake flour
  • 0.5 cup cornmeal
  • 0.33333334326744 cup superfine sugar
  • 0.5 cup milk
  • 0.33333334326744 cup melted butter
  • 1 egg
  • 0.25 teaspoon vanilla extract
  • 0.25 cup raisins
Instructions:
  • In a small bowl, gently pour warm water and sprinkle yeast over the surface. Allow the mixture to rest until the yeast softens and a creamy foam forms, approximately 5 minutes.
  • Combine cake flour, cornmeal, sugar, and salt in a small bowl and sift together.
  • In a large bowl, whisk together the milk, melted butter, egg, and vanilla until smooth. Gently fold in the flour mixture until just combined, then stir in the yeast mixture until smooth. Cover with a light cloth and allow to rise in a warm place until doubled in volume, approximately 1 to 2 hours.
  • Prepare a 9-inch round pan with parchment paper. Place a steamer insert in a saucepan, fill with water below the steamer, and bring to a boil covered over high heat.
  • Transfer the fluffy batter into the pan and generously top it with raisins. Firmly place the pan on the steamer insert, cover it, and steam for approximately 25 minutes, or until a toothpick poked into the center emerges clean.
  • Let the pan sit on a wire rack for 10 minutes to cool slightly, then gently remove the cake and allow it to cool completely on the wire rack.
