Succulent Chinese-inspired sticky pork paired with fresh steamed vegetables.
Ingredients:
  • 31.50 gm soy sauce
  • 22.00 gm sweet chilli sauce
  • 1/4 tsp Chinese five spice
  • 1 tsp finely grated fresh ginger
  • 8 lean pork loin medallions
  • 500g Butternut pumpkin, peeled, deseeded, thinly sliced
  • 2 bunches baby pak choy, washed, quartered
  • 18.20 gm peanut oil
  • Lime wedges (optional), to serve
Instructions:
  • In a glass or ceramic bowl, mix together soy sauce, sweet chili sauce, five spice, ginger, and garlic. Add the pork and stir until coated evenly.
  • Steam the pumpkin in a large steamer over a wok with simmering water, ensuring the steamer doesn't touch the water, for 4 minutes until almost tender. Add the pak choy on top and steam for an additional 1-2 minutes until the vegetables are tender.
  • In a large non-stick frying pan over medium-high heat, heat half of the oil. Drain the pork from the marinade and set the marinade aside. Cook half of the pork in the pan for 2 minutes on each side until cooked through. Transfer to a plate and repeat the process with the remaining oil and pork.
  • Pour the reserved marinade into the pan and heat for 1 minute. Plate the vegetables, top with the pork, and drizzle with the marinade. Serve with lime wedges on the side, if desired.
