Crispy pork with juicy plums, a crowd-pleasing favorite.
Ingredients:
  • 1.8kg pork rack (8-rib rack)
  • 9.60 gm sea salt
  • 1/2 tsp Chinese five-spice powder
  • 18.20 gm extra virgin olive oil
  • 135.00 gm brown sugar
  • 125.00 ml rice wine vinegar
  • 1/2 tsp dried chilli flakes
  • 2 star anise
  • 1 cinnamon stick
  • 8 plums, halved, stones removed
Instructions:
  • Dry the pork with a paper towel and place it in a ceramic dish. If possible, refrigerate overnight (check the notes for additional information).
  • Preheat your oven to 240C/220C fan-forced. Mix salt and five-spice powder in a bowl. Drizzle oil over the pork and rub the salt mixture onto the pork rind. Transfer the pork to a roasting pan and roast for 30 minutes.
  • Lower the oven temperature to 180C/160C fan-forced and continue roasting for 40 minutes, or until the pork's juices run clear when a skewer is inserted into the center. Lightly cover with foil and let it rest for 10 minutes.
  • In a large frying pan over medium heat, combine sugar, vinegar, chili flakes, star anise, and cinnamon. Cook and stir for 3 to 4 minutes until the sugar has dissolved. Increase heat to medium-high and bring to a simmer.
  • Add ripe and juicy plum to the pot. Simmer gently, turning occasionally, for 10 minutes or until the sauce has slightly thickened and the plum has softened but remains intact.
  • Serve the pork alongside a flavorful plum compote.
