Indulge in the decadent flavors of a classic Christmas cake, rich with brandy-soaked fruit and a hint of spice.
Ingredients:
  • 500g sultanas
  • 1 x 375g pkt raisins, coarsely chopped
  • 3 x 100g pkts mixed glace cherries, coarsely chopped
  • 1 x 300g pkt currants
  • 250ml (1 cup) brandy
  • Melted butter, to grease
  • 250g butter, at room temperature
  • 155g (3/4 cup, firmly packed) brown sugar
  • 4 eggs, at room temperature
  • 115g (1/3 cup) breakfast marmalade
  • 300g (2 cups) plain flour
  • 75g (1/2 cup) self-raising flour
  • 2.50 gm mixed spice
  • Blanched almonds, to decorate
  • 80ml (1/3 cup) brandy, extra
Instructions:
  • In a large glass or ceramic bowl, mix the sultanas, raisins, cherries, currants, and brandy together. Cover with plastic wrap and let it sit for 6 hours, stirring occasionally to let the flavors meld.
  • Preheat your oven to 150°C. Grease a 22cm round cake pan with melted butter and line it with two layers of non-stick baking paper, making sure it reaches 6cm above the edge of the pan.
  • Cream together the butter and sugar using an electric beater in a bowl. Incorporate the eggs one at a time, beating well after each addition until combined. Don't worry if the mixture curdles due to the high proportion of eggs to butter. Mix in the marmalade until well combined. Gently fold in the combined flour and mixed spice until just combined. Add the sultana mixture, then spoon the batter into the prepared pan and smooth the surface. Tap the pan on the counter to remove any air bubbles and top with the almonds.
  • Line the pan with 3 layers of slightly taller newspaper than the baking paper and secure with kitchen string. Bake for 3 1/2 hours or until a skewer inserted into the center comes out clean, covering with foil if needed to avoid overbrowning.
  • Drizzle the surplus brandy over the warm cake, then cover the pan with a fresh tea towel and let it rest overnight to cool to perfection. Enjoy!
