Decadent date and walnut cake, a luxurious twist on traditional fruitcake.
Ingredients:
  • 2 pounds dates, pitted and chopped
  • 2 pounds English walnuts, coarsely chopped
  • 1.25 cups all-purpose flour
  • 1 tablespoon baking powder
  • 4 large egg yolks
  • 4 large egg whites
Instructions:
  • First, let's set the stage for baking perfection by preheating the oven to 300 degrees F (150 degrees C. Next, prepare your 10-inch tube pan by generously greasing and flouring it.
  • In a large bowl, mix together dates, walnuts, flour, sugar, and baking powder. Incorporate egg yolks until blended.
  • Whisk egg whites in a spotless, large glass or metal bowl until stiff peaks form, then gently fold them into the date mixture until fully combined. Transfer the mixture into the prepared pan.
  • Bake in the preheated oven for about 90 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
