Whip up a flawless pavlova adorned with seasonal fruits for the perfect festive dessert that everyone will love!
Ingredients:
  • 6 Free Range Egg whites
  • 1.25 gm cream of tartar
  • 330g caster sugar
  • 5.00 gm cornflour
  • 300ml thickened cream
  • 12.00 gm icing sugar mixture
  • 1 tsp vanilla bean paste
  • 1 green kiwifruit, thinly sliced
  • 1 gold kiwifruit, thinly sliced
  • 3 thin slices peeled pineapple
  • 1/2 mango, peeled, thinly sliced
  • 2 passionfruit, halved
Instructions:
  • Preheat the oven to 100°C. Line a baking tray with baking paper, then draw a 20cm circle on the paper and flip it over.
  • Using an electric mixer, whip the egg whites and cream of tartar in a clean, dry bowl until stiff peaks form.
  • Whisk in the sugar one tablespoon at a time, ensuring each addition is fully incorporated until the mixture becomes thick and glossy. Then add the cornflour and gently mix until just combined.
  • Spoon the mixture onto the lined tray and shape into a disc using a palette knife, following the circle as a guide. Smooth the sides.
  • Bake the pavlova for 1 1/2 hours until dry to the touch. Turn off the oven and let the pavlova cool completely inside with the door slightly open for 2 hours.
  • Whip cream, icing sugar, and vanilla with an electric mixer until soft peaks form in a medium bowl.
  • Transfer the fluffy pavlova onto a beautiful serving plate. Spoon the delightful cream mixture on top. Using a star cutter, create fun shapes from kiwifruit and pineapple, then artfully place them over the creamy layer along with juicy mango slices. Finish by drizzling the luscious passionfruit pulp over the decadent creation. Enjoy right away.
