Deliciously sweet molasses pie with an open structure that attracts hungry insects, also known as Shoofly Pie. Believed to be created by the Pennsylvania Dutch, possibly originating from the "Centennial Cake" at the 1876 Philadelphia Centennial Exposition.
Ingredients:
  • 2 (9 inch) unbaked pie crusts
  • 1 teaspoon baking soda
  • 1 cup warm water
  • 1 cup molasses
  • 2 cups all-purpose flour
  • 0.5 cup white sugar
  • 0.5 teaspoon baking soda
  • 0.25 cup butter
Instructions:
  • Gently lay the pie crusts in 9-inch pie pans and refrigerate for about 1 hour before using.
  • Preheat the oven to 425 degrees F (220 degrees C) for the perfect baking temperature.
  • Combine baking soda and warm water in a medium bowl until dissolved, then mix in the molasses until foamy. Pour the mixture into the pie crusts.
  • Combine flour, sugar, and baking soda in a medium bowl. Use a pastry blender to create fine crumbs by blending in the butter. Sprinkle the crumb mixture over the molasses filling in the pie crusts.
  • Place in the hot oven for 10 minutes, then lower the temperature to 350°F (175°C) and bake for an additional 35 minutes until the crust is golden brown and the filling is firm.
