Cheesy bacon potato dumplings - a comforting classic from the old country.
Ingredients:
  • 1 pound bacon
  • 4 small potatoes, peeled and coarsely chopped
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 0.5 teaspoon baking powder
  • 1 pinch salt
  • 2 cups shredded Wisconsin brick cheese
Instructions:
  • Fry bacon in a large skillet over medium-high heat, turning occasionally, until evenly browned, for about 10 minutes. Place the cooked bacon on paper towels to drain. Once cooled, crumble the bacon and set aside.
  • Puree the potatoes in a food processor for 2 to 3 minutes. Transfer the pureed potatoes to a bowl and mix in the flour, eggs, baking powder, and salt to form a sticky dough. Set the dough aside.
  • - Fill a large pot halfway with lightly salted water and bring it to a boil. - Scoop spoonfuls of the sticky dough onto a small cutting board and use a knife to cut them into tablespoon-sized pieces, dropping each piece into the boiling water. - Boil the dumplings over medium heat until they float, for about 2 to 3 minutes. - Using a slotted spoon, transfer the dumplings to a large serving bowl.
  • For each batch of dumplings, generously top with crunchy bacon crumbles and a generous handful of sharp shredded brick cheese. Keep layering dumplings in the bowl and sprinkle each batch with bacon and cheese. Once all dumplings are prepared, gently combine everything in the haluski to blend the flavors.
