Chef John's sizzling beef fat Yorkshire pudding: Warm, fluffy pastries that smell like Christmas.
Ingredients:
  • 4 large eggs
  • 1 teaspoon kosher salt
  • 0.875 cup all-purpose flour
  • 1 cup whole milk
  • 0.75 cup melted beef fat
Instructions:
  • In a bowl, vigorously whisk eggs and salt until light and frothy. Gradually whisk in flour and milk until the mixture is smooth and free of lumps; the batter should be thin and just enough to thinly coat the back of a spoon.
  • Pour the batter into a 4-cup measuring cup and refrigerate for at least 15 minutes.
  • Heat oven to 400°F (200°C).
  • Pour 1 tablespoon of melted beef fat into each cup of a 12-cup nonstick muffin tin, then use your finger to grease the sides and tops of the cups. Set the muffin tin on a baking sheet.
  • Roast in the preheated oven on the middle rack until the fat is sizzling, for 10 to 15 minutes.
  • Take out of the oven and generously fill each muffin cup halfway with the delicious batter.
  • Bake the pudding in the preheated oven for an additional 25 minutes until golden brown and puffed. Take it out of the oven and quickly poke a hole in the center of each to release steam. Serve it hot, warm, or at room temperature.
