Creamy mashed root vegetables with a rich and indulgent twist.
Ingredients:
  • 6 carrots, peeled and chopped
  • 4 large parsnips, peeled and chopped
  • 2 turnips, peeled and chopped
  • 0.5 cup butter
  • 0.5 cup heavy whipping cream
  • 0.25 teaspoon ground nutmeg
  • 1 pinch cayenne pepper
  • salt and ground black pepper to taste
Instructions:
  • In a pot, combine carrots, parsnips, and turnips and cover with cold water lightly seasoned with salt. Bring to a boil and simmer until the vegetables are tender when pierced with a fork, for about 25 minutes. Drain and transfer back to the pot.
  • Combine butter, cream, nutmeg, cayenne pepper, salt, and black pepper with vegetables, using a potato masher to roughly mash until vegetables are broken down yet colorful.
