Ingredients:
  • 300 g feta cheese
  • 1 lemon
  • 3-4 sprigs of fresh thyme
  • 210 ml extra virgin olive oil
  • 1 tablespoon coriander seeds
  • 1/2 lemon
  • 320 g mixed black and green olives (stone in)
  • 1 dried red chilli
  • 2 fresh bay leaves
  • 250 ml extra virgin olive oil
  • 3 red peppers
  • 4 cloves of garlic
  • 2 sprigs of fresh rosemary
  • 4 tablespoons red wine vinegar
  • 150 ml extra virgin olive oil
Instructions:
  • - Sterilize three 500ml jars. - Cut feta into 2cm cubes, peel lemon zest into thick strips, and pick thyme leaves. - In the first jar, layer feta, lemon zest strips, thyme leaves, sea salt, and black pepper. Fill with oil, then seal. - Crush coriander seeds with a pestle, add to the second jar, then squeeze lemon juice. - Add olives, chilli, bay leaves, sea salt, and black pepper. Fill with oil, then seal. - Char peppers over direct flame, then peel, deseed, and slice into strips. - Add unpeeled garlic, rosemary, sea salt, black pepper, and vinegar to the third jar. - Mix in the peppers. Fill with oil, then seal. - Store unopened jars for up to 2 months; refrigerate and use within 2 weeks after opening.
