Experience the joy of mussels with 3 tasty variations. Which will delight your taste buds first?
Ingredients:
  • 36 (about 1kg) black mussels
  • 20g butter
  • 35g (1/2 cup) fresh breadcrumbs (made from day-old bread)
  • 1 fresh red chilli, deseeded, finely chopped
  • 1 garlic clove, crushed
  • 40.00 gm bought basil pesto
  • 40g feta, crumbled
  • 10.60 gm light soy sauce
  • 10.60 gm fresh lime juice
  • 1 green shallot, end trimmed, thinly sliced diagonally
  • 1/2 tsp sesame oil
Instructions:
  • Steam the mussels for 4 minutes in a basket over simmering water until they open. Discard any unopened mussels and remove empty shells. Arrange 12 mussels on a serving platter and place the rest on a baking tray.
  • Preheat the grill on high. Prepare the breadcrumb topping by melting butter in a saucepan over medium heat until it's foamy. Stir in breadcrumbs, chili, and garlic, cooking for 2 minutes until fragrant and golden brown. Spread the breadcrumb mixture over half of the mussels on the baking tray.
  • Evenly spoon the pesto over the remaining mussels on the baking tray and generously sprinkle with feta for a flavorful topping.
  • Place mussels on a baking tray under the preheated grill, positioned about 6cm from the heat source. Cook for about 5 minutes or until mussels are browned and heated through. Then, transfer them to a serving platter.
  • Prepare the dressing by mixing soy sauce, lime juice, shallot, and sesame oil in a bowl. Drizzle the mussels with the dressing before serving immediately.
