Triple chocolate mousse tart

Calling all chocolate lovers - this triple-layered treat is a must-try!
Ingredients:
  • 250g plain chocolate biscuits
  • 20.00 ml plain flour
  • 125g butter, melted
  • cocoa powder, to serve
  • 100g dark chocolate, chopped
  • 126.25 gm thickened cream
  • 200g dark chocolate, chopped
  • 4.40 gm vanilla extract
  • 600ml thickened cream
Instructions:
  • Prepare a 22cm round springform pan by greasing it and lining the base with baking paper. In a food processor, combine biscuits and flour, and process until finely chopped. Add butter and process until mixture is combined. Press the mixture evenly onto the base of the pan. Chill in the refrigerator for 30 minutes.
  • Create decadent chocolate ganache: Combine chocolate and cream in a small saucepan over gentle heat, stirring continuously for 3 to 4 minutes until silky. Drizzle over biscuit base and chill for 30 minutes to firm up.
  • To prepare the chocolate mousse, combine chocolate, vanilla, and half of the cream in a saucepan over medium-low heat. Stir constantly for 3-4 minutes until smooth. Remove from heat and let it cool for 15 minutes. In a separate bowl, whip the remaining cream until soft peaks form, then fold in the chocolate mixture. Pour this mixture over the ganache layer, refrigerate overnight, dust with cocoa, and serve.
