Triple Chocolate Mousse: A luscious blend of dark, milk, and white chocolate in one creamy delight.
Ingredients:
  • 250ml (1 cup) thickened cream
  • 1 x 200g pkt dark cooking chocolate, coarsely chopped
  • 4 eggs, at room temperature, separated
  • 200g good-quality milk chocolate, coarsely chopped
  • 70g (1/3 cup) caster sugar
  • Double cream, to serve
  • White chocolate, shaved, to serve
Instructions:
  • In a medium bowl, whisk the thickened cream with a clean electric beater until firm peaks form.
  • Melt the dark chocolate in a heatproof bowl over simmering water (ensure no water touches the bowl), stirring with a metal spoon until smooth. Remove from heat and mix in 2 egg yolks until well combined and the mixture thickens.
  • Divide the cream in half. Set one portion aside. Using a large metal spoon, mix half of the cream into the dark chocolate until smooth. Then, add the rest and gently fold in. Repeat the process with the milk chocolate and remaining cream and egg yolks.
  • Using an electric beater, whip the egg whites in a large clean, dry bowl until soft peaks form. Slowly add the sugar, 1 tablespoon at a time, beating constantly until the sugar dissolves and the mixture becomes thick and glossy.
  • Gently fold half of the fluffy egg whites into the rich dark chocolate mixture. Then fold the rest of the egg whites into the silky milk chocolate mixture. Spoon the decadent dark chocolate mixture into four 250ml (1-cup) glasses and layer with the luscious milk chocolate mixture on top.
  • Place on a tray, cover, and chill in the fridge for 3 hours until set. Serve topped with double cream and shaved white chocolate.
