Triple Citrus Tuna Steak

Citrus-marinated tuna steak coated in chip crumbles, seared to perfection for a delicious dish!
Ingredients:
  • 2 medium oranges, juiced
  • 1 medium lime, juiced
  • 1 medium lemon, juiced
  • 0.25 cup diced red onion
  • 2 tablespoons minced habanero pepper
  • 1 teaspoon cider vinegar
  • 1 teaspoon minced garlic
  • 1 pinch dried oregano
  • 0.5 cup cubed mango
  • 1 tablespoon minced fresh cilantro
  • 2 (4 ounce) tuna steaks
  • salt and freshly ground black pepper to taste
  • 5 ounces kettle-cooked potato chips
  • 2 tablespoons unsalted butter
  • 1 tablespoon sweet chili sauce
  • 1 cup hot cooked jasmine rice
Instructions:
  • In a spacious bowl, combine orange juice, lime juice, lemon juice, red onion, habanero pepper, vinegar, garlic, and oregano.
  • Make the salsa by mixing together mango, red onion, fresh cilantro, salt, and pepper in a separate bowl. Set aside.
  • Season tuna: Sprinkle with salt and pepper, then coat it in the marinade in a bowl. Let it marinate for 30 minutes.
  • As the tuna marinates, finely crush potato chips in a blender and transfer to a bowl.
  • Coat the marinated tuna with crushed chips on both sides.
  • Preheat a nonstick skillet over medium-high heat. Add butter and cook until melted and foamy. Sear tuna for 2 to 3 minutes on each side. Transfer tuna out of the skillet.
  • Top the tuna with a flavorful chile sauce and serve alongside fragrant jasmine rice and refreshing mango salsa.
