Irresistible triple lemon pound cake - bursting with lemon flavor for rave reviews every time.
Ingredients:
  • 2 sticks butter, softened
  • 0.5 cup vegetable oil
  • 3 cups white sugar
  • 5 eggs, at room temperature
  • 3.3333332538605 cups all-purpose flour, sifted twice
  • 0.5 teaspoon baking powder
  • 1 cup milk
  • 1 lemon, zested and juiced
  • 2 teaspoons vanilla extract
  • 1 teaspoon lemon extract
Instructions:
  • Preheat the oven to a toasty 300 degrees F (150 degrees C), while you generously grease and flour a 10-inch tube pan.
  • In a bowl, use an electric mixer to whip the butter until creamy. Pour in oil and continue whipping until creamy. Add sugar and whip until fully combined, making sure to scrape down the sides. Add eggs one at a time, whipping well after each addition.
  • Combine flour, baking powder, and salt in a bowl. Gradually mix into the sugar mixture with milk, starting and finishing with the flour mixture. Incorporate lemon zest, juice, and extracts. Transfer batter into the pan.
  • Bake in the preheated oven for about 90 minutes until a toothpick inserted into the center of the cake comes out clean. Let it cool in the pan on a rack before removing.
