Experience the joy of crafting trofie pasta from scratch, then indulge in a vibrant homemade pesto sauce.
Ingredients:
  • 2 cups all-purpose flour
  • 0.25 cup water, or more to taste
  • 2 large eggs
  • 1 splash olive oil
  • 2 pinches salt
  • 2 cloves garlic, roughly chopped
  • 2.5 tablespoons pine nuts
  • 2.5 cups lightly packed fresh basil
  • 0.5 cup extra-virgin olive oil
  • 0.5 cup grated Parmesan cheese
  • 1 pinch salt
Instructions:
  • In a food processor, blend flour, 1/4 cup water, eggs, olive oil, and salt until just combined. Check the dough by pinching it to ensure it forms a clump. If it's dry, gradually add 1 to 2 tablespoons of water at a time until it forms a ball.
  • Transfer dough onto a floured surface and knead until smooth and elastic. Wrap in plastic and refrigerate for at least 30 minutes.
  • Take a small piece of the dough, approximately 1/2 teaspoon in size. Roll it into a tube on a wooden cutting board using the tips of your fingers, then create a spiral shape by pulling it diagonally at a 45-degree angle. Repeat with the remaining dough.
  • In a food processor bowl, blend garlic and pine nuts until sandy. Add basil, oil, and process until smooth. Mix in grated Parmesan cheese until combined. Adjust seasoning with salt to taste.
  • 1. Boil a large pot of lightly salted water. Cook trofie pasta until al dente, about 12 minutes. Drain.
  • Combine the hot trofie with the vibrant pesto and enjoy right away.
