Authentic Ligurian pesto with no garlic, handcrafted in a mortar, served with trofie pasta.
Ingredients:
  • 2.5 cups fresh basil leaves
  • 1 teaspoon rock salt
  • 0.5 cup freshly grated Parmigiano-Reggiano cheese, or to taste
  • 2 tablespoons finely grated Pecorino Romano cheese
  • 0.5 cup extra-virgin olive oil, or as needed
  • 1 (16-ounce) package fresh trofie pasta
Instructions:
  • Combine pine nuts in a large mortar and pestle, crushing until a paste forms, about 2 minutes. Add basil leaves in batches, crushing and grinding until they release their oil and break apart. Add salt and continue until all basil leaves are crushed into a paste.
  • Combine the Parmesan and Pecorino cheeses using a wooden spoon. Gradually add the oil until a creamy paste forms.
  • 1. Boil a large pot of lightly salted water until bubbling. Add fresh trofie pasta and cook for 3 to 4 minutes, stirring occasionally, until perfectly al dente. Drain the pasta and toss with pesto sauce, adding a touch of extra olive oil if desired.
