Vegetarian Pizza with Pesto and Delicata Squash

Delicata squash or butternut squash can both be used on this delicious pesto pizza.
Ingredients:
  • 1 delicata squash - halved lengthwise, seeded, and cut into 1/4-inch slices
  • 4 tablespoons olive oil, divided
  • coarse salt and freshly ground black pepper to taste
  • 1 tablespoon flour, or as needed for dusting
  • 1 (16 ounce) package pizza dough
  • 1 tablespoon cornstarch, for dusting
  • 4 tablespoons basil pesto sauce
  • 16 ounces shredded mozzarella cheese, or as needed
  • 0.5 cup freshly grated Parmesan cheese, or to taste
  • 2 tablespoons chopped pecans, or more to taste
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C).
  • Toss delicata squash with 2 tablespoons of olive oil until well coated. Arrange on a baking sheet and generously season with salt and pepper.
  • Roast delicata squash in the preheated oven until tender, approximately 10 minutes. Then, chop into pieces.
  • Preheat oven to 450 degrees F (230 degrees C).
  • Separate the pizza dough into 2 equal pieces. Sprinkle flour on a work surface and flatten each dough piece into a round pizza shape.
  • Prepare the baking sheets with a light dusting of cornstarch. Carefully place the pizza rounds onto the prepared baking sheets. Brush each pizza with a generous drizzle of 1 tablespoon olive oil, then spread 2 tablespoons of pesto. Top with a layer of mozzarella and Parmesan cheese. Finish by sprinkling squash pieces over the cheese.
  • Bake in a hot oven for around 10 minutes until the pizza crust is crispy. Sprinkle pecan nuts on top before serving.
