Tropical cocktail with rum, fruit, and coconut liqueur - a beachy delight!
Ingredients:
  • 750ml (3 cups) chilled unsweetened pineapple juice
  • 185ml (3/4 cup) Malibu liqueur
  • 125ml (1/2 cup) Bacardi rum
  • 250.00 ml ice cubes
  • 500g chilled rockmelon, deseeded, peeled, coarsely chopped
  • Thin rockmelon wedges, to serve
Instructions:
  • Combine pineapple juice, Malibu, Bacardi, ice, and rockmelon in a blender and blend until smooth.
  • Spoon the mixture into individual serving glasses and garnish each with a melon wedge on the rim before serving.
