Tropical fruit salad with spiced guava syrup

Vibrant and refreshing fruity dessert, a taste of paradise to end summer meals.
Ingredients:
  • 125ml guava
  • 125ml water
  • 45g palm sugar
  • 2 whole star anise
  • 1 vanilla bean, split
  • 1/4 papaya, seeded, peeled, cut into 3cm pieces
  • 1/4 pineapple, peeled, cored, thinly sliced
  • 12 fresh lychees, peeled
  • 1 carambola (star fruit), thinly sliced
Instructions:
  • In a small saucepan over low heat, blend the guava juice, water, palm sugar, star anise, and vanilla. Stir and cook for 5 minutes until the sugar dissolves and the syrup slightly thickens. Take off the heat and let it cool completely.
  • Combine the papaya, pineapple, lychees, and carambola in a large bowl. Drizzle with the syrup and seal with plastic wrap. Chill in the fridge for 1 hour before serving.
  • Divide mixture evenly into individual bowls and serve promptly.
