Tropical fruit salad with ginger coconut cream for a refreshing twist.
Ingredients:
  • 270ml can coconut cream
  • 20.00 gm caster sugar
  • 42.00 gm lime juice
  • 2cm piece fresh ginger, grated
  • 500g pineapple, peeled, thinly sliced
  • 12 lychees, peeled, seeds removed
  • 4 gold kiwifruit, peeled, thinly sliced
  • 2 medium mangoes, thinly sliced
  • 4 passionfruit, halved
  • 1 tsp finely grated lime rind
  • 32.50 gm shredded coconut, toasted
Instructions:
  • In a saucepan over medium heat, mix together cream, sugar, lime juice, and ginger. Let it come to a boil, then lower the heat to simmer for 5 to 8 minutes until slightly thickened. Allow it to cool before using.
  • Mix together pineapple, lychees, kiwifruit, mango, passionfruit pulp, and lime rind in a large glass or ceramic bowl. Toss gently to blend. Drizzle with coconut cream mixture, sprinkle with coconut, and serve.
