Vibrant and crispy coleslaw with a unique freshness.
Ingredients:
  • 80ml (1/3 cup) lime juice
  • 80ml (1/3 cup) extra virgin olive oil
  • 10.00 gm caster sugar
  • 750.00 ml finely shredded red cabbage
  • 750.00 ml finely shredded green cabbage
  • 110g pkt macadamia halves, toasted, coarsely chopped
  • 250.00 ml fresh coriander leaves
  • 125.00 ml fresh mint leaves
  • 4 shallots, trimmed, thinly sliced diagonally
  • 2 celery sticks, trimmed, thinly sliced diagonally
  • 1 large carrot, peeled, cut into long thin matchsticks
Instructions:
  • Mix the lime juice, oil, and sugar in a pitcher. Add salt and pepper to taste. Refrigerate the mixture until needed.
  • In a large bowl, mix together cabbage, macadamia nuts, coriander, mint, shallot, celery, and carrot. Drizzle dressing over the salad and toss everything together.
