Whip up a tasty starter with fresh, high-quality fish. Enjoy with a glass of chilled white wine for a touch of elegance. Always consume raw fish the same day it's purchased.
Ingredients:
  • 2 x 130 g super-fresh trout fillets
  • 1 fresh red chilli
  • 1 heaped teaspoon baby capers
  • 1 lemon
  • extra virgin olive oil
  • 3 sprigs of dill (15g)
Instructions:
  • Lay the trout fillets on a board, skin-side up. Use a sharp knife to carefully remove and discard the skin. Slice the trout fillets thinly and arrange on a large plate. In a bowl, combine sliced chili, capers, lemon zest, lemon juice, sea salt, and black pepper. Pour the dressing over the trout slices, drizzle with extra virgin olive oil, and garnish with dill fronds. Serve immediately.
