Truffle Stuffed Chocolate Chip Cookie Cups

Indulgent Truffle-filled Chocolate Chip Cookies - a holiday must-have for all.
Ingredients:
  • 1 package (14oz) Immaculate Baking Co.™ gluten free chocolate chunk cookie dough
  • 12 White or Milk Chocolate Truffles
  • 1 cup White or Semisweet Chocolate Chips
  • Sprinkles, for topping
Instructions:
  • Preheat oven to 350°F and generously grease 24 mini muffin cups. Cut each cookie dough round in half and press one half into each muffin cup. Bake for 17-19 minutes until cookies are beautifully golden brown and puffy.
  • Once out of the oven, press the bottom of a wooden spoon into the center of each cookie cup while they're still warm. Let the cups cool completely in the muffin pan on a cooling rack.
  • Gently loosen cooled cookie cups from muffin pan using a butter knife. Carefully cut truffles in half with a small, sharp serrated knife. Set aside.
  • Place the chocolate chips in a small microwave-safe bowl and microwave on High for 1 minute. Stir, then continue to microwave in 30-second intervals, stirring after each, until the chocolate is melted and smooth. Transfer the melted chocolate into a small resealable plastic bag and snip off one corner to use.
  • Drizzle melted chocolate into the cookie cups, then add a truffle half on top, cut side down. Drizzle more chocolate on top, and sprinkle with decorations. Allow the chocolate to set before serving.
