Make Tsoureki Easter bread for a delicious twist on a classic holiday treat loved by everyone.
Ingredients:
  • 2.25 cups milk
  • 1 cup sugar
  • 0.25 cup sweet butter
  • 1 teaspoon yeast
  • 8 cups unbleached bread flour, or more as needed
  • 4 eggs
  • 1 egg white
  • 1 cup chopped blanched almonds
  • 1 pound chopped dried apricots
  • 1 orange, zested and juiced
  • 1 lemon, zested
  • 1 tablespoon mahlepi
  • 1 egg yolk
  • 0.25 cup milk
  • 0.5 cup slivered almonds
Instructions:
  • In a saucepan over gentle heat, mix together milk, sugar, and butter until it reaches 112 degrees F (44 degrees C). Take the mixture off the heat, add yeast, and allow it to bubble.
  • In a large bowl, combine flour with yeast mixture, whole eggs, egg white, chopped almonds, apricots, orange zest and juice, lemon zest, and mahlepi. Mix well and knead until dough is slightly sticky, adding more flour if needed. Let the dough rise until doubled in size, approximately 1 hour.
  • In a bowl, mix egg yolk and 1/4 cup of milk, then chill in the refrigerator.
  • Preheat your oven to 350°F (175°C) for a perfect bake.
  • After the dough has risen, gently press out any air bubbles and divide into 2 equal parts. Then, divide each half into 3 equal balls and roll each into an 18-inch rope. Braid 3 ropes to form a loaf, tucking the ends underneath, and place on a baking sheet. Repeat with the remaining 3 ropes to make the second loaf. Brush each loaf with egg yolk mixture and sprinkle with slivered almonds before giving them a final brush of the mixture.
  • Bake in the oven until loaves are golden brown and sound hollow when tapped on the bottom, for approximately 40 minutes.
