Indulge in Greek Easter Tsoureki: sweet orange-flavored bread adorned with chocolate eggs.
Ingredients:
  • 64.38 gm lukewarm milk
  • 7g sachet active dry yeast
  • 562.50 ml plain flour, sifted
  • 36.00 gm sugar
  • Pinch sea salt
  • 50g butter, melted
  • 1 egg, plus 1 extra, beaten
  • 82.50 gm hot water
  • 1/4 tsp crushed aniseed, or vanilla extract
  • 1/2 orange, zest grated
  • 6 medium sized chocolate Easter eggs
Instructions:
  • Combine milk and yeast in a jug, then mix in a few teaspoons of flour to create a paste. Cover and leave in a warm place to rise. Lightly grease 2 oven trays.
  • Combine 1 1/2 cups of flour, sugar, and salt in a bowl. Add yeast mixture, butter, egg, combined water, aniseed, and zest. Mix until well combined.
  • Transfer the mixture onto a lightly floured surface and knead vigorously for approximately 10 minutes, gradually incorporating the remaining flour until a smooth and pliable dough is formed. Cover and let the dough rise in a warm spot until it doubles in size, which usually takes about 1 1/2 hours.
  • After punching down the dough, divide it into 6 pieces. Roll each piece into three 20cm ropes. Braid 3 ropes together to form a plait, then press ends to create a circle. Repeat with the rest of the ropes.
  • Position the loaves on trays and cover them with a fresh cloth. Let them expand in a cozy spot until they have doubled in size. Preheat your oven to a moderate temperature of 180C (or 160C for fan-forced ovens).
  • Coat each ring generously with beaten egg. Bake until they turn a beautiful golden brown and sound hollow when tapped underneath. Let them sit on trays for 5 minutes, then move to a wire rack to cool completely. Present by placing a chocolate egg on top and adding a charming ribbon.
