Tuna, olive and caper burritos

Surprise with fresh tuna in these healthy burritos.
Ingredients:
  • 4 small flour burritos
  • 4 (about 180g each) tuna steaks
  • 4 ripe tomatoes, finely chopped
  • 1 red onion, finely chopped
  • 85g olive
  • 50g capers
  • 40.00 ml drained jalepeno chillies, chopped
  • 21.00 gm lime juice
  • Coriander leaves, to serve
Instructions:
  • Preheat the char-grill on high heat. Brush the burritos lightly with oil and grill for about 1 minute on each side until they are nicely charred.
  • Coat tuna steaks lightly with oil and season generously with salt and pepper. Sear for 1-2 minutes per side for a perfect medium doneness, or until preferred doneness is reached. Place on a plate, cover with foil, and let rest for 5 minutes before serving.
  • In a medium bowl, mix together tomatoes, onions, olives, capers, chili, and lime juice. Drizzle with the remaining oil and toss gently. Season with salt and pepper to taste.
  • Slice the tuna thinly and mix it with the tomato mixture. Toss together and spoon over the burritos on serving plates. Finish with a sprinkle of fresh coriander.
