Tuna and roast capsicum rice salad

Quick and affordable salad that's perfect for busy days at work.
Ingredients:
  • 450g packet microwavable white rice
  • 40.00 ml red wine vinegar
  • 425g can tuna in oil, drained, reserving
  • 18.40 gm oil
  • 110g capsicum
  • 4 gherkins, finely diced
  • 3 green onions, thinly sliced
  • 20.00 ml chopped fresh oregano leaves
Instructions:
  • Prepare the rice according to the package instructions, then transfer it to a bowl and allow it to cool for 15 minutes.
  • In a screw-top jar, combine vinegar, reserved oil, salt, and pepper. Secure lid tightly and shake well to blend.
  • Combine tuna, capsicum, gherkins, onion, and oregano with rice. Drizzle with dressing and mix well. Serve.
